ALASKAN WILD FISH FAIR

CHAYA Brasserie has always been a hot spot in Los Angeles for celebrities and food lovers but this time, Executive Chef Shigefumi Tachibe knocks it out of the park with ALASKAN WILD FISH FAIR. Now through, April 30th, fish lovers will be swimming in some of the most incredible seafood dishes they will ever taste.

Chef Tachibe’s ALASKAN WILD FISH FAIR menu could very well be called the Omega-3 Extravaganza. Each hand-selected fish on the menu contains heart healthy omega-3 fatty acids which are known to decrease blood pressure, help prevent blood clots, and they help keep skin looking younger ~ perfect for Los Angeles patrons. Gourmet dining at it’s guilt-free, most “bikini” best, has never tasted better.

On the menu,

ALASKAN SUNSET Start your dinner off right with a Grey Goose L’Orange Vodka cocktail with caramelized Blood Orange, Fresh Citrus, and the natural sweetener of agave.

Whetting your appetite for the main courses are palate-stunning appetizers. Here is my take on Chef Tachibe’s innovative creations:

HALIBUT & SCALLOP TARTARE Served immersed in a bed of blue ice, the freshest halibut and scallops are tossed with lime, sea salt, and a hint of olive oil. Mouth watering, light and healthy. Halibut has a naturally firm, white flesh that is slightly sweet. A large fish weighing in at up to over 600 pounds, halibut will put no pounds on your hips as this fish is low in calories, low in fat and high in protein. Combined with heart healthy scallops, a great way to start your meal.

KING SALMON MI-CUIT RAVIOLI Translucent ravioli are filled with luscious King Salmon tapenade, fresh tomato, Meyer lemon, and refreshing basil oil. King Salmon is one of the healthiest fish you can enjoy as it brings strength to your muscles, repairs heart damage, and helps lower blood pressure.

KING CRAB & UNI TART The health benefits of King Crab and Uni (Sea Urchin) will far outweigh any non-bikini calories from rich Hollandaise and creamed mushrooms. King Crab is packed with vitamin C aiding your immune systyem, giving radiant skin, and it is naturally low calorie. Uni packs in at one of the highest proteins from the sea you can enjoy with super low calories per serving.

Diving into the entrees,

PAN ROASTED KING SALMON Roasted King Salmon rests atop smooth artichoke puree, roasted fennel, and is perfectly flavor accented with Lavender Pinot Noir sauce. The perfect wine to pair with this dish, enjoy a glass of Pinot Noir as CHAYA Brasserie has a complete wine list for your dining experience. Good for your health, artichokes and fennel are high in fiber, low in calorie, and add vitamin A to this heart healthy dish.

OJJA (Spicy Seafood Hot Pot) One of my favorite of Chef Tachibe’s ALASKAN WILD FISH FAIR menu, this spicy seafood cioppino-style dish will be one you remember. Packed with healthy mineral rich seafood delicacies of halibut cheek, calamari, shrimp, lobster claw, black mussel, and clam, Chef Tachibe infuses metabolism boosting spices for the perfect amount of flavorful heat.

ARARE CRUSTED HALIBUT Japanese Arare crackers resembling snow pellets crust light, flaky, sweet halibut which is grilled and served atop a Spring beans medley, Swiss chard, and a fresh herb pesto broth. This light, flavorful dish helps you stay “bikini” with high fiber, vitamin A, and high protein from green peas, fava beans, Swiss chard and the centerpiece of it all… Alaskan halibut.

BAKED BLACK COD Melt-in-your-mouth black cod is baked to perfection and gives a sensual flavor to your palate with Summer Black Truffle soy glaze. Your tastebuds definitely swim in flavors as they combine with the Hijiki brown rice risotto and crisp Lotus root chip. For your health, black cod is known to aid in the reduction of inflammation and I can’t think of a better meal to enjoy after a tough workout.
