In honor of the autumn season at the Henry and Renée Segerstrom Concert Hall and the upcoming 5th Anniversary of Leatherby’s Café Rouge on October 19, 2011, Executive Chef Ross Pangilinan is proud to announce an exciting fall menu in addition to a new series of pre-theater menus. Inspired by the current main stage show of West Side Story, diners can choose from a three course menu for $39 per person or $54 per person with wine pairings.
Highlights of the West Side Story menu includes the “Maria”, a first course offering of poached tiger shrimp, avocado and spicy mango jam; second course offerings of “The Jets”, a Buttermilk poached chicken breast, country fried chicken skin, creamed spinach, baby carrots and twice baked potatoes; or “The Sharks”, a grilled thresher shark, mojo isleno, crispy plantains and corn sofrito. Additional theater-inspired menus will be available for the upcoming productions of Shrek The Musical, Blue Man Group and White Christmas.
For guests who prefer to dine a la carte, Chef Ross Pangilinan’s fall menu includes seasonal offerings such as: Raw and Poached Pear Salad, Amazing mixed greens, pomegranate vinaigrette, Stilton blue, candied walnuts ($11); Corn-fed Pork Porterhouse, Caramelized blackberry red wine sauce, red cabbage, fried Brussels sprouts, smoked sweet potato, Szechuan pepper ($30); Certified Angus Beef Tenderloin, Sous vide celery root, watercress puree, Pon-Neuf potatoes, trumpet mushrooms, sauce “Rossini” ($36).
