Fresh cucumber, fava beans, ancho chili, lemon, saffron and apple cider vinegar are just a few of the delicious ingredients in this quick and easy salad.

Ingredients

1/4 cup apple cider vinegar
Fine zest of 1 lemon
Juice of 1 lemon
1/2 teaspoon cumin
1/2 teaspoon ancho chili powder
1 1/2 teaspoons celery seed
pinch saffron (optional)
2 tablespoons extra virgin olive oil
Pinch sea salt
Pinch black pepper
1 small red onion, thinly sliced
1/4 cup chopped fresh cilantro leaves
2 pepperoncini, seeded and diced
1 medium cucumber, peeled, seeded and cubed
2 large roma tomatoes, seeded and diced
2 cans organic fava beans, drained and rinsed

Instructions

In medium mixing bowl, whisk together vinegar, lemon zest, lemon juice, cumin, ancho chili powder, celery seeds, saffron (if using), olive oil, salt, and pepper.
Once combined, add onion, cilantro, cucumber, tomato, and fava beans; toss well to coat.
Chill until ready to serve.
