Red Slaw with Grapes is a light picnic friendly side dish, red cabbage and grapes are packed full of fiber, water, and antioxidants. This simple cider vinaigrette with mustard aids in digestion while adding flavor to this easy slaw. Make ahead for a worry free party, picnic, or meal.

Ingredients

2 tbsp apple cider vinegar
1 tbsp dijon mustard
2 tsp sugar
salt and pepper to taste
1/4 cup extra virgin olive oil
1 small head red cabbage, finely shredded
1/3 cup chopped fresh parsley
6 scallions, chopped
2 cups seedless red grapes, chopped

Instructions

Make the dressing: Whisk the vinegar, mustard, sugar, salt and pepper into large bowl.
Gradually whisk the olive oil until well blended.
Add the cabbage, parsley, scallions and grapes into the bowl and toss.
Cover and refrigerate 1-4 hours before serving.
