Tommy Bahama used White Peach Perfect Puree, but you can puree your own peaches, if you are so inclinced. Then add a splash of peach liqueur, shake it up and finish with sparkling wine or champagne. White Peach Bellini
Ideal for brunch, the Tommy Bahama White Peach Bellini hits the spot. It’s light and delicious and easy to make at home. Start with some peach puree.
- 1 part White Peach Perfect Puree
- ¾ part Giffard Crème De Peche or Peachtree Peach Liqueur
- 3 dashes Grapefruit Bitters
- 4 parts Piper Sonoma Sparkling Wine
- 2 slices white peach
- In a mixing glass, add white peach puree, peach liquor, bitters and ice.
- Shake with a Boston Shaker to mix.
- Strain into champagne glass, top with sparkling wine.
- Garnish: 2 slices of white peach
