Arugula Salad with Beets, Mandarin Orange, and Artichoke Hearts
Salad
Arugula greens are tossed with mandarin orange, fresh beets, artichoke hearts, and a champagne vinaigrette

Ingredients

3 tablespoons olive oil
2 tablespoons good quality champagne vinegar
1/4 red onion, diced
1/2 teaspoon black pepper
1/2 teaspoon sea salt
1 small to medium Persian cucumber, sliced
2 small or 1 medium fresh beet, halved and thinly sliced
2 mini bell pepper (preferably orange, yellow, or red) halved lengthwise and thinly sliced
1 small to medium jalapeno pepper, thinly sliced
2 mandarin oranges, peeled and separated, pith remaining
1/2 cup marinated artichoke hearts, roughly diced
4 lightly packed cups arugula

Instructions

In a large mixing bowl, whisk together olive oil and vinegar.
Add onion, black pepper, and salt.
Add remaining ingredients.
Just before serving, toss together ingredients and serve.
Serving suggestions: top with sauteed or grilled shrimp, salmon, sliced chicken breast or filet mignon
