Chicken Taco with Avocado Salsa

Chicken Taco with Avocado Salsa is a classic dish using rotisserie chicken, lime juice, avocado, spices, black beans, cilantro, and queso.

A bikini friendly dinner the whole family will enjoy and a bonus for busy moms! Buy rotisserie chicken in the deli section at the grocery store or prepare in a crock pot, hot pot or air fryer. Make ahead of time, separate and shred it. Then, use for tacos, wraps, sandwiches, for any quick mid-week meal. Lunch or dinner.

Chicken Taco with Avocado Salsa
Beef & Poultry
Chicken Taco with Avocado Salsa is a classic dish using rotisserie chicken, lime juice, avocado, spices, black beans, cilantro, and queso.

Ingredients

3 tablespoons fresh lime juice
1 1/2 tablespoons extra-virgin olive oil
1/2 teaspoon ground cumin
1/2 teaspoon freshly ground black pepper
1/4 teaspoon kosher salt
3/4 cup seeded and diced tomato
1/4 cup diced white onion
1 tablespoon chopped fresh cilantro leaves
1 avocado, peeled and diced
4  corn tortillas
2 cups mixed greens
1 (15-ounce) can no-salt-added black beans, rinsed and drained
2 cups shredded boneless rotisserie chicken breast
1/4 cup crumbled queso fresco

Instructions

Combine first 5 ingredients in a medium bowl, stirring with a whisk.
Add tomato, onion, cilantro, and avocado; toss gently to coat.
Heat tortillas in an iron skillet over medium high heat.
Place 1 tortilla on each of 4 plates.
Layer each tortilla with 1/2 cup mixed greens, about 1/4 cup beans, 1/2 cup shredded chicken, 1/4 cup avocado salsa, and 1 tablespoon queso.
Optional: fresh jalapenos
