The essence of falafel is the chickpea! Otherwise known as garbanzo beans, chickpeas are in the legume family. Chickpeas are a great source of protein and have many other nutritious properties.

Containing all 9 essential amino acids, chickpeas are considered to be a “complete” protein. Their strength in protein content make them ideal for vegan and vegetarian diets.

  • Choline – promotes healthy brain and nerve function
  • Folate – also key in promoting brain health
  • Magnesium – assists in stress-response!
  • Potassium – helps regulate the heart

Falafel is a classic Middle Eastern dish that is most commonly served as an appetizer. Made with chickpeas and spices, falafel is usually fried. This recipe, however, emphasizes the healthier cooking method of baking. Using a mixture of mashed chickpeas, cumin, shallots, and other herbs and spices, this oven baked falafel is the perfect compliment to a simple salad, grilled, baked, or sauteed proteins such as chicken, fish, or turkey.

Recipe

Oven Baked Falafel
Appetizer
Mashed chickpeas are mixed with herbs and spices and baked in a hot oven for about 25 minutes

Ingredients

3 cups canned or cooked chickpeas, drained, reserve water
4 cups water (combine with reserved water from can, if desired)
1 medium shallot, finely chopped
2 cloves garlic, finely chopped
1/4 cup fresh Italian parsley, finely chopped
1/4 cup fresh cilantro, finely chopped
1 teaspoon cumin
1/2 teaspoon cardamom
1/2 teaspoon sea salt
1/4 teaspoon black pepper
1 1/2 tablespoons fresh lemon juice
1/4 cup grapeseed oil

Instructions

Preheat oven to 375*F.
Add chickpeas to a food processor one cup at a time and grind slightly using the pulse feature, about 2 times.
Add the shallot, garlic, parsley, cilantro, cumin, cardamom, sea salt, pepper, and lemon juice and pulse together until finely minced, scraping down sides, as needed.
Using an ice cream scoop, scoop a healthy portion but not too large, of the mixture.
Press mixture into patties.
Using about 2 tablespoons of the grapeseed oil, coat a baking sheet with the oil.
Place patties on baking sheet and bake for 25 to 30 minutes or until crisp.
Serve with salad, enjoy as an appetizer, or serve as a side dish.
Makes about 4 patties
