Tijuana Turkey Torte is made with ground turkey, green chiles, tomato sauce, stewed tomatoes, zucchini slices, taco seasoning, and cheddar cheese.

You don’t have to wait until Cinco de Mayo to enjoy this delicious Mexican-style dish. Super easy to make, this family favorite is perfect for mid-week meals. Make ahead of time for a quick meal for lunch or dinner.

Tijauna Turkey Torte Recipe tips! Spray 9″ square casserole dish with non-stick cooking spray prior to layering tortillas or grease the dish with a little grape seed oil (my preference).

Easy Recipe Substitutes

  • Prefer beef over turkey? Use 1 pound of lean ground beef or even shredded pork
  • Not a fan of cheddar cheese? Goat cheese or provolone cheese are great options
  • Want more spice? Use a medium or hot salsa
  • Even more spice? Add a 1/4 to 1/2 cup diced jalapeno
  • When serving, garnish with chopped fresh cilantro or flat leaf parsley

Tijuana Turkey Torte
Entree
Tijuana Turkey Torte is made with ground turkey, green chiles, zucchini slices, taco seasoning, and cheddar cheese. Perfect Cinco de Mayo dish

Ingredients

1 tablespoon grape seed oil
1 pound ground turkey
1 small white onion, chopped
1 small zucchini, sliced into rounds
1 8-ounce can tomato sauce
16-ounce can stewed tomatoes
1 small jar mild salsa
1 7-ounce can diced green chiles
1 package taco seasoning
12 corn tortillas
1 pound sharp cheddar cheese, grated

Instructions

Preheat oven to 350*F.
Heat grape seed oil in a large skillet over medium high heat.
Add turkey, onion, and zucchini slices and saute until turkey is cooked through.
Add tomato sauce, stewed tomatoes, salsa, green chiles, and taco seasoning and stir to combine.
Tear tortillas into pieces and lay in bottom of a 9x9 inch dish.
Spoon 1/3 of meat sauce over tortillas and sprinkle with 1/3 of the cheese.
Repeat 2 more times with tortillas, meat sauce, and cheese.
Bake for 30-45 minutes.
Cool about 15 minutes prior to serving.
