Country Salad with Apples & Pecans
The Fall season brings inviting flavors and fresh air. Crisp apples and the refreshing crisp air fall breezes. Whether a weekend football gathering, family reunion, mountain hikes, or hill country skiing, the culinary fall favorites include pumpkin, hearty squash layered with refreshing, simple salads such as this one.
This Country Salad with Apples and Pecans incorporates a mix of berries, feta cheese, orange drizzled with balsamic dressing.
Recipe tips:
- Whisk the salad dressing ahead of time. Better yet, double or triple the salad dressing recipe, place in a glass jar or bottle, and place in the refrigerator for use on a variety of salads
- Substitute pine nuts! walnuts, pistachios, cashew halves, or almonds for pecans
- Add thinly sliced shallots! << I LOVE that suggestion
- Berry alternatives: blackberries, blueberries, or raspberries
- Substitute goat cheese for feta cheese
Country Salad wine pairing options include both white and red wines. For white wine pairings, try a nice White Pinot Noir which is made with the essence of the skin of the pinot noir grapes. For red wines, a light Beaujolais is perfect or enjoy a delightful rose!
Protein add-ons:
- Grilled chicken breasts, sliced
- Broiled white fish such as sea bass or black cod
- Grilled salmon or shrimp
- For meat lovers, sliced flank steak, sliced petit filet mignon, or add a tablespoon per serving of crispy pancetta
