Campfire Cooking for everyone
Whether you are camping or glamping, a good campfire cookout is a must-have for the menu. I am more of a pescatarian, however, I love tempeh! This Spicy Tempeh is infused with flavors of tamari.
What is tempeh, you ask? Tempeh is fermented soy beans which are formed into a loaf or “pattie-style” product. Tempeh is a great source of protein and fiber. The fermentation process promotes a healthy digestion. Due to the high fiber content (approximately 18% per serving), tempeh absorbs spice flavors really well while maintaining the form and shape of the product.
Spicy Tempeh with Eggplant in Campfire Packet tips!
Here, tempeh is cubed and placed into an aluminum foil “packet” with eggplant, carrots, baby bok choy, and green onion. Feel free to switch out these ingredients for your favorites. Tempeh burgers are easy to grill… I thought I posted a recipe on the site for Grilled Tempeh. Looks like I didn’t! So, I will be cooking up some tempeh yummy burgers soon.
CAMPFIRE COOKING VEGGIE AND PROTEIN OPTIONS:
- Substitute cremini mushrooms for eggplant
- Add marinated artichoke hearts! yum 🙂
- Switch out red onion for green onion
- Add a couple of whole garlic cloves
- Red bell peppers are always a favorite. Layer in color with a mix of red, orange, and yellow
- Prefer a meat protein, use 1 1/2-inch cubes of chicken breast, chicken tenders, shrimp, salmon, or sea bass
