Winter weather calls for warming up and there is no more comforting way than a quick, easy, simple, delicious, and healthy soup!

Creamy Tomato Basil Soup is made with a dehydrated soup mix, coconut milk, tomato paste and vegetable broth. This super easy soup is filled with delicious ingredients such as brown rice, celery, sun-dried tomatoes, carrots, shallots, yellow bell pepper, basil, and parsley.

Added ingredients include no-sugar-added tomato paste, tomato sauce (or petite diced stewed tomatoes), and lite coconut milk. YUM!

Soup Topping Suggestions:

  • I chose to keep the soup non-dairy by using coconut milk (and the lite version) but… other delicious serving options include:
  • Goat cheese
  • Feta cheese
  • Roasted fresh organic corn kernels
  • Fresh chopped parsley or basil
  • Almonds
  • Chopped walnuts or almonds
  • Canned low sodium black beans
  • A dollop of sour cream or creme fraiche

Creamy Tomato Basil Soup is made with a dehydrated soup mix, coconut milk, tomato paste and vegetable broth

Ingredients

About 7 cups of low sodium vegetable broth
Dried tomato basil soup mix such as Frontier Soups
1 small can no-sugar-added tomato paste
1 15-ounce can no-sugar-added tomato sauce or tomato puree
1 15-ounce can lite coconut milk
Any type of garnish, see list above

Instructions

Heat vegetable broth in a large stockpot over medium high heat.
Bring to a boil, then reduce to a simmer, add dried soup mix, stir, cover and simmer for 15 minutes.
Stir in tomato paste, tomato sauce, cover and simmer about 10 minutes.
Stir in coconut milk and continue cooking, uncovered, for 5-7 minutes.
Ladle into soup dish and serve with desired toppings.
