These easy Wonton Taco Cups are versatile and delicious. Switch out ingredients as you like, including vegan options.

Wonton Taco Cups

RECIPE TIPS:

  • Layer wonton wrappers, as suggested, or skip the top layer wonton and keep as a single layer
  • Shredded cheese is shown in the images but I am a goat cheese lover! Substitute feta cheese, as well!
  • Try a combination of ground beef on the bottom layer and ground turkey on the top layer!
  • Skip the meats and use taco seasoned shrimp (dice the shrimp so they fit well in the wonton)
  • For a vegan option, layer as you would a Mexican dip with vegan refried beans, non-dairy cheese or yogurt, black beans, cilantro. RECIPE: #SOBIKINI MEXICAN LAYER DIP

Wonton Taco Cups

Ingredient Ideas:

  • Fresh herbs
    • Cilantro
    • Italian parsley
    • A small amount of fresh oregano
  • Jalapeno pepper slices, green chiles, diced red, yellow, or orange bell pepper
  • Canned petite diced tomatoes (they can be watery!) or remove seeds from fresh roma tomatoes and dice
  • Red onion, green onion, or chives
  • Pickled red onion! YUM!
  • Avocado or guacamole
  • Or Avocado Cashew Butter (one of my faves!)
  • Beans!
    • Black beans
    • Pinto beans
    • Cannellini beans
    • Low-fat refried beans
  • Shredded lettuce or slaw
  • Fresh tomato salsa
  • Red bell pepper paste! LOVE!!!!
  • Sour cream or creme fraiche
  • Diced or sliced black olives, kalamata olives or green olives, if you like
  • You could really go out of the box and do fruits! Mango, pineapple
  • And of course, hot sauce for the hot sauce lovers

Wonton Taco Cups
Appetizer
Wonton wrappers are used to create a baked mini-taco perfect for parties or snacks.

Ingredients

Olive or grape seed oil
1 pound lean, ground turkey
1 package taco seasoning
36 wonton wrappers
1 can black beans, rinsed and drained
1/2 cup diced red onion
1/2 cup seeded and diced tomatoes
1/2 cup fresh salsa with or without green chiles
8-ounce log plain goat cheese (or 11-ounce)
1/4 cup plus 2 tablespoons chopped chives (for garnish)
1/4 cup freshly chopped cilantro leaves (for garnish)
Hot sauce (bottles of various kinds for when serving)

Instructions

Preheat oven to 375*F.
Using a paper towel, coat muffin tin with olive oil.
Heat heavy skillet with 2 tablespoons olive oil or grape seed oil over medium high heat.
Add ground turkey and begin to brown the meat, breaking it up as it cooks.
As turkey begins to brown slightly, add the taco seasoning.
Note: I like for the seasoning to get really immersed into the ground turkey. So, I add about a 1/4 cup of hot water to the pan and let it simmer until most of the moisture has cooked out.
Remove from heat and set aside.
Line muffin tins with 2 wonton wrappers, layering them alternatively to cover the bottom of the tin and make for a stylish muffin "taco" cup.
Add a dollop of the cooked taco seasoned ground turkey.
Top with a dollop of black beans.
Top with red onion and diced tomatoes.
Add one wonton wrapper on top of the onion and tomatoes, pressing down lightly to create the layers.
Top with a dollop of taco turkey.
Top with fresh salsa or red bell pepper paste and goat cheese.
Bake for about 12-15 minutes.
When ready to serve, sprinkle with a few chives and cilantro leaves.
Serve with hot sauce, on the side, for the hot sauce lovers.
