Mixed Greens with Peaches and Feta Cheese Salad

Getting my inspiration from Chef Nika Shoemaker-Machado herself, I was torn between using goat cheese or her recommended feta cheese. I went with her vision and tossed in a few recipe adjustments of my own. Recipes, they are more like guidelines anyway!
The star of this Mixed Greens with Peaches and Feta Cheese Salad is, of course, the Peaches. Celebrating National Peach Month, I couldn’t help but join in the fun. I am a Georgia peach, myself. There are a million ways to prepare peaches. For this recipe, I kept it simple by slicing fresh peaches with the skin on.

Mixed greens. Red Bell pepper. Green seedless grapes. Pine nuts. Feta cheese. and PEACHES. Tossed with a shallot vinaigrette.
Recipe Tips:
- Sometimes pine nuts can be hard to find. Use whole almonds, instead. Or, go with Georgia’s idea of candied pecans.
- Sub my go-to goat cheese for feta. Or use gorgonzola.
- Skip the grapes and toss in blueberries.
- White wine vinegar and apple cider vinegar can be substituted for the champagne vinegar.
- Toast the pine nuts in the toaster oven. Be sure to pay attention; they could toast more quickly.
- Toss the salad with the vinaigrette just before serving or serve on the side so the greens don’t get soggy.
- Serve with grilled or poached salmon, grilled chicken, or grilled shrimp.
