Patina, the esteemed Relais & Châteaux property and flagship of Joachim Splichal’s Patina Restaurant Group located at the Walt Disney Concert Hall in Downtown Los Angeles, continues its Wine Series in November 2011 with a Calera wine dinner on November 10 ($145 per person, including wine pairings, tax, and gratuity).
Winery Owner Josh Jensen will be in attendance, providing guests with firsthand insight into his winemaking process and showcasing the winery’s exceptional California-grown Pinot Noir and Chardonnay 2008 and 2010 vintages. A champagne reception will start off the evening and be followed by a seasonal four-course menu from Executive Chef Tony Esnault, complementing wines such Calera Chardonnay, Central Coast, 2010; Calera Chardonnay, Mount Harlan, 2010; Calera Pinot Noir, Ryan Vineyard, 2008; Calera Pinot Noir, Jensen Vineyard 2008; and Calera Pinot Noir, Mills Vineyard 2008.

Later in the month, Esnault will celebrate Thanksgiving with a delightful four-course menu ($68 per person/$32 for children under 12, exclusive of tax and gratuity) featuring his take on a traditional turkey preparation: Golden Roasted Organic Turkey with wild mushroom stuffing, yams, and Brussels sprouts. The flavorful and moist turkey is prepared by deboning organic breasts and thighs, rolling them with aromatics such as garlic, sage, rosemary, and thyme, slowly cooking them separately at low temperature via sous vide, and finishing the dish with the above accompaniments. Additional highlights from the menu include Patina’s signature Maine Lobster Velouté, a seasonal Kabocha Squash Velouté, and a Poached Apple dessert. Suggested wine pairings and optional service from the restaurant’s Caviar or Cheese Guéridon are available à la carte.
