I love Substitute Yourself Skinny! Susan has made so many delicious, tasty, and irresistible dishes… that are healthy AND easy to make. Oh, and it is also husband approved! That’s the trifecta right there! I have tried so many of the recipes and we find ones we enjoy and revisit them often. I love that the recipes are not only easy-to-make and easy, and I don’t feel like I’m dieting or scrimping. Susan is brilliant.
One of our favorite recipes is the sweet-and-sour chicken… it reminds us of one of our favorite local Chinese food restaurants and it’s a healthier option. Another is the flat belly eggs benedict. I’m not a huge fan of hollandaise sauce and my husband is… this recipe is a great compromise because my husband felt like it was indulgent of the traditional recipe and I enjoyed it as a lighter version of the hollandaise, and this version was tasty to me. 🙂
