3 Cheese Stuffed Pasta
Pizza & Pasta
3 Cheese Stuffed Pasta combines mozzarella, parmesan, and ricotta for a classic Italian favorite for lunch, brunch, or dinner

Ingredients

Jumbo pasta shells
1 egg, beaten
16 ounce fat-free ricotta cheese
1/2 pound shredded mozzarella cheese, low-fat, divided
1/4 pound grated Parmesan cheese, divided
1 1/2 teaspoons fresh Italian flat-leaf parsley, chopped
1 teaspoon sea salt
1/2 teaspoon ground black pepper
1 Jar classic no-sugar pasta sauce
1/4 pound sliced fresh mushrooms (optional)

Instructions

Preheat oven to 350 degrees.
Cook pasta shells and drain.
In a large bowl mix egg, ricotta, mozzarella, parmesan, parsley, salt and pepper.
Stuff the shells with above mixture and place into baking dish.
In separate bowl, mix pasta sauce, mushrooms, and cheese reserves.
Pour mixture over shells.
Bake 45-60 mins or until edges are bubbly.
