Creamy Tomato Basil Soup
Winter weather calls for warming up and there is no more comforting way than a quick, easy, simple, delicious, and healthy soup!
Creamy Tomato Basil Soup is made with a dehydrated soup mix, coconut milk, tomato paste and vegetable broth. This super easy soup is filled with delicious ingredients such as brown rice, celery, sun-dried tomatoes, carrots, shallots, yellow bell pepper, basil, and parsley.
Added ingredients include no-sugar-added tomato paste, tomato sauce (or petite diced stewed tomatoes), and lite coconut milk. YUM!
Soup Topping Suggestions:
- I chose to keep the soup non-dairy by using coconut milk (and the lite version) but… other delicious serving options include:
- Goat cheese
- Feta cheese
- Roasted fresh organic corn kernels
- Fresh chopped parsley or basil
- Chopped walnuts or almonds
- Canned low sodium black beans
- A dollop of sour cream or creme fraiche

- Peeled and deveined, tail-off shrimp!
- Cooked ground turkey!
- Cooked shredded chicken breast!
