Egg Salad Sandwich with Watercress

Watercress is one of the most powerful foods you can enjoy! Growing naturally in springs of water, this remarkable green is delicious as an accompaniment to salads, fish dishes, in smoothies, and on sandwiches such as this one. Watercress is known to have healing properties that promote positive health benefits including health conditions such as cancer, diabetes, and help to stave off colds.

Other key ingredients in this yummy Egg Salad include:

  • Black Sesame seeds – known to help keep away graying hair (yes, please!) and are a natural source of calcium

Egg Salad Sandwich recipe

EGG SALAD:

  • Two recipes… one location!

    • 8 eggs
    • 1/2 cup chopped celery
    • 1/3 cup chopped green onion
    • 1/3 cup diced red bell pepper
    • 1 tablespoon non-fat or vegan mayo
    • 3 tablespoons nonfat yogurt
    • 1/4 teaspoon black pepper
    • 1 teaspoon grey poupon or similar mustard
    • 8 slices nonfat rye bread
    • And add the watercress / arugula mixture from the recipe below
      • Steam the eggs
      • Dice the eggs
      • Mix all the ingredients together
      • Place atop 4 of the rye bread slices
      • Top with equal amounts of the watercress mixture (recipe below)
      • Top with the remaining rye bread slices and enjoy!Egg Salad Sandwich

Recipe

Egg Salad Sandwich with Watercress
Entree
Egg Salad Sandwich with Watercress features egg, vinaigrette, avocado, and watercress

Ingredients

Juice of 1 small lemon
1 tablespoon white wine vinegar
1 teaspoon grey poupon or similar mustard
1/8 teaspoon cracked black pepper
pinch sea salt
1 teaspoon Manuka honey
2 Tablespoons grape seed oil
1 teaspoon black sesame seeds
1 cup watercress
1 cup arugula (baby arugula)
4 eggs
pinch cumin
1/2 teaspoon coconut oil
4 slices sprouted bread
1/2 avocado, sliced

Instructions

In a small mixing bowl, whisk together lemon, white wine vinegar, grey poupon, black pepper, sea salt, and honey.
Mix well and then add the grape seed oil and black sesame seeds.
Add watercress and arugula and toss to coat.
In a separate bowl, whisk together the eggs and cumin.
Heat the coconut oil in a medium skillet over medium heat, add the eggs and cook until just cooked through, scrambling lightly.
Serve atop toasted sprouted bread dividing the watercress mixture and eggs across each of 2 slices.
Top each slice with the remaining bread slices.
Slice in half and serve.
