Susan’s Pesto Chicken Sandwich
Pesto Chicken Sandwich with plain yogurt, basil, parmesan cheese, lemon zest, English muffins, chopped roasted red bell peppers, and cooked chicken breasts.
This simple recipe is simply delicious. Seriously, when I make this, my tastebuds love me!
Simple Recipe Tips:
- Quick and easy! Buy a whole roasted chicken and use the cooked chicken breasts for this sandwich
- Keep pre-cooked chicken breasts handy in your refrigerator for this quick, easy meal
- Warm the chicken breasts for a few seconds in the microwave on a low setting or at 50% power for about 40 seconds
- Purchase a jar of marinated roasted red bell peppers and keep in the fridge for quick snacks or meal, like this one
- Nutritional yeast can be substituted for the parmesan, if desired
- Want extra spice? Add some cracked black pepper or even white pepper which is a little spicier
- Toast the English muffins just before assembling
