Skillet Braised Scallops with Apples & Walnuts

A top five all time recipe I have created that I forget to make! Skillet Braised Scallops with Apples and Walnuts… simply delicious!

Julienne the apples, saute them with the garlic, add the chopped walnuts, a hint of lemon juice. Set aside. Add the scallops to the pan and saute about 7 minutes over medium-low heat. Hint: use white or black pepper in the recipe

To Serve as an appetizer:

  • Arrange endive leaves, lettuce leaf cups, or celery stalks on a platter
  • Spoon apple mixture on top
  • Top apple mixture with scallops
  • Garnish with fine lemon zest

As an entree, serve Skillet Braised Scallops with Apples and Walnuts:

  • In a lettuce cup (a bigger one than just the lettuce leaf as an appetizer)
  • In half of a papaya
  • In half of a roasted acorn squash
  • Atop white rice or quinoa
  • Toss with linguini pasta

Skillet Braised Scallops with Apples and Walnuts
Appetizer
Skillet Braised Scallops with Apples and Walnuts

Ingredients

2 tablespoons grape seed oil
1 garlic clove, finely chopped
2 golden delicious or honeycrisp apples, julienned
1 lemon, halved
1 8-ounce package chopped walnuts or walnut pieces
Sea salt
1 pound baby scallops (if frozen, thaw before cooking)
White or black pepper
Endive leaves
Celery stalks
Iceberg, Red or Green leaf lettuce leaves

Instructions

Heat 1 tablespoon of the oil in a skillet over medium heat.
Add garlic and saute about 30 seconds.
Add apple slices, squeeze 1/2 lemon (remove seeds), and add a pinch of salt.
Add walnuts and saute until apples are just softened, about 7 minutes.
Remove from skillet and set aside.
Heat remaining tablespoon of oil in skillet.
Add scallops, squeeze other half of lemon, add 2 pinches of white pepper and gently saute about 7 minutes.
Arrange endive, celery, and/or lettuce on a platter.
Spoon walnut mixture on top of leaf or celery stalk.
Top with fine zest of one lemon, if desired.
