A top five all time recipe I have created that I forget to make! Skillet Braised Scallops with Apples and Walnuts… simply delicious!
Julienne the apples, saute them with the garlic, add the chopped walnuts, a hint of lemon juice. Set aside. Add the scallops to the pan and saute about 7 minutes over medium-low heat. Hint: use white or black pepper in the recipe
To Serve as an appetizer:
- Arrange endive leaves, lettuce leaf cups, or celery stalks on a platter
- Spoon apple mixture on top
- Top apple mixture with scallops
- Garnish with fine lemon zest
As an entree, serve Skillet Braised Scallops with Apples and Walnuts:
- In a lettuce cup (a bigger one than just the lettuce leaf as an appetizer)
- In half of a papaya
- In half of a roasted acorn squash
- Atop white rice or quinoa
- Toss with linguini pasta
