My brother lives in Texas. He has for quite a long time. As a result, he and his beautiful family embrace all things Texas. The big Texas star. Rodeos. Hot sauce (yes, that’s a thing). A juicy steak. And, chili, the Tex Mex way. So, when he was grocery shopping one day, he called me and said, “hey sis! Want to try some of this chili mix I like?” To which, of course, I replied, “Sure, Dave Dave! Send it right over.” To California, that is. Seems I’ve lived here not too much longer than he’s lived in Texas. And he sent that chili mix right over. He called on a Tuesday evening and to my delight, it arrived on a Friday morning.
What I love about this recipe is that it is so dang simple! It’s almost too simple. I’m used to sauteeing onion and garlic. Adding all kinds a chili powders and a variety of beans. This recipe… ground beef, ground turkey, the chili mix, beans, tomato paste or sauce, add a little water and call it a day. A yummy day.
Serving Suggestions:
- Over seasoned yellow rice. Like the one pictured. It is tasty and easy to make. You have a full meal in about 45 minutes tops, including the rice.
- Over long grain white rice, basmati rice, or brown rice
- Quinoa is another great option
- When serving, top with grated cheddar cheese, mozzarella cheese, or your favorite cheese
- Top with freshly diced white or yellow onion
- Top with diced jalapeno
- Add a cup of cooked black beans
