Tex Mex Shrimp with Lime combines grilled shrimp, green onion, cilantro, green chiles, adobo sauce, and black beans. You can make adobo sauce from scratch but with so many good ones on the market, save yourself some time and buy a jar that includes chopped chile peppers.

Top this dish off with healthy fats from avocado slices tossed together with a little plain, kefir yogurt, lime juice, and diced tomatoes. Tex Mex Shrimp with Lime
Entree, Seafood
Tex Mex Shrimp with Lime combines grilled shrimp, green onion, cilantro, green chiles, adobo sauce, and black beans

Ingredients

For Shrimp:
24 extra large shrimp, peeled and deveined
1/2 teaspoon garlic powder
1/2 teaspoon ground cumin
1/4 teaspoon kosher or sea salt
1 Tablespoon grape seed oil for cooking, see instructions below
For Black Bean Salsa:
1/4 cup chopped green onion
1/4 cup chopped fresh cilantro leaves
1 Tablespoon extra virgin olive oil
1 Tablespoon red wine vinegar
1 Tablespoon minced chipotle chiles in adobo sauce (buy a small jar)
1 teaspoon minced fresh garlic
1/4 teaspoon kosher or sea salt
1 15-ounce can low sodium black beans, drained and rinsed
Avocado Dressing:
1/4 cup plain kefir yogurt
1 teaspoon fresh lime juice
1 medium ripe avocado, peeled and sliced
1 cup chopped seeded roma tomato
Lime wedges for garnish

Instructions

Combine shrimp, garlic powder, cumin, and salt in a medium mixing bowl and let marinate for 10 minutes.
Prepare black bean salsa by combining green onion, cilantro, olive oil, red wine vinegar, chiles, garlic, salt, and black beans in a medium mixing bowl.
Toss together well and set aside.
Prepare Avocado Dressing by mixing together kefir yogurt, lime juice, and avocado in a small mixing bowl.
Toss together with the tomato and set aside.
Heat a grill pan over medium high heat with 1 Tablespoon grape seed oil.
Add shrimp and grill until just cooked through, turning once.
Serve over rice, quinoa, chopped romaine lettuce leaves or other lettuce and top with Black Bean Salsa and a dollop of Avocado Dressing
