Turkey Quinoa Stuffed Peppers

Bell peppers are stuffed with lean turkey, a little hot sauce, cooked quinoa, and goat cheese. Fresh cilantro balances out this delicious #SOBikini metabolism friendly dish that is perfect as lunch for one or a family dinner.

Turkey Quinoa Stuffed Peppers Tips:

  • Cook the quinoa according to package directions which is similar to cooking rice
  • Not a fan of quinoa? Substitute yellow rice, basmati rice, or brown rice
  • For the cooked quinoa, add flavor by adding in spices like saffron, turmeric, cardamom, and lemon zest
  • My favorite combo for ground turkey and quinoa is to add some diced zucchini, yellow squash, red onion. Add about 1/4 cup each and cook with the quinoa or rice
  • This recipe calls for lemon juice but you can’t go wrong with lemon zest, too. Use both!

I just had to throw in this photo of a “box grater”. This reminds me of home. Cooking with my mom and using the box grater for all kinds of things like cheese, carrots for our carrot cake and salads. Today’s modern day zesters are easier to use. My favorite is the Microplane zester.

Recipe

Turkey Quinoa Stuffed Peppers
Beef & Poultry
Bell peppers are stuffed with ground turkey, quinoa, cilantro, goat cheese and baked until tender.

Ingredients

4 large red, yellow, or orange bell peppers
1 pound lean ground turkey
1/2 diced white or yellow onion
1/3 teaspoon hot sauce
1 clove garlic, minced
1 teaspoon sea salt
1/2 teaspoon ground black pepper
1 1/2 tablespoons lemon juice
1/2 cup cooked quinoa (see notes above)
1/4 cup chopped fresh cilantro leaves
2 ounces goat cheese
2 tablespoons olive oil

Instructions

Preheat oven to 350*.
Line baking sheet with parchment paper.
Set aside.
Slice top off of peppers and scoop out membranes and seeds.
In a large mixing bowl, mix together turkey, onion, hot sauce, garlic, sea salt, black pepper, lemon juice, quinoa, cilantro, and goat cheese.
Fill peppers with turkey mixture and place on prepared baking sheet.
Drizzle each with 1/2 tablespoon olive oil.
Bake for about 45 minutes or until peppers are tender and mixture has cooked through.
