Turkey Spinach Meatballs

One of my favorite snack foods are Turkey Spinach Meatballs.

When I worked in Corona del Mar, I would buy their Turkey Spinach Meatballs when on my break. I loved them so much that I would buy a whole bunch and freeze them. Then, I would eat them one by one. Delicious! One day, a friend of mine said, “Why don’t you make your own?” So, I analyzed the meatball to figure out the flavor profile and ingredients. Here’s my recipe!

Recipe Options:

  • Add freshly grated parmesan cheese
  • I make mine without an egg. You really don’t need it. However, if you want to add one, feel free!
  • Plain breadcrumbs
  • Italian seasoning
  • Taco seasoning
  • Substitute garlic powder if you don’t have fresh garlic

Those are all great options for additional flavor and texture. I encourage you to try the original recipe first. Add ingredients for a different version later.

Serving Suggestions:

  • With basmati rice
  • As a slider on a mini brioche bun
  • With your favorite pasta – spaghetti, penne, or linguini
  • Quinoa – recipe, YUM! >> Quinoa, Broccoli, and Toasted Cashews
  • Roasted Red Potatoes

Turkey Spinach Meatballs
Appetizer, Entree
Turkey Spinach Meatballs

Ingredients

4 cloves garlic
1 medium white onion
1 tablespoon grape seed oil
1 bag fresh spinach
1 pound ground turkey
pinch and a half sea salt
pinch or two of black pepper

Instructions

Preheat oven to 400*F.
Peel and dice garlic.
Peel and dice onion.
Heat grape seed oil in skillet over medium heat.
Add garlic and saute about 1 1/2 minutes.
Add onion and saute about 3 1/2 minutes until onion is slightly translucent.
Add fresh spinach (entire bag) and cover with lid.
Saute about 4 minutes or until spinach has wilted completely.
Add ground turkey to a medium mixing bowl and add spinach mixture to bowl.
Fold spinach mixture into ground turkey.
Using an approximate 1 1/2 ounce ice cream scoop, form mixture into balls.
Place on a parchment paper lined baking sheet and bake for about 12 minutes or until cooked through.
Serve hot or allow to cool prior to placing in the refrigerator.
NOTE: these are my "go-to" snacks. I keep them in the refrigerator and eat them cold.
