If your into pork, head to Vibiana in downtown Los Angeles this Sunday, May 1 12noon-7:30p. Executive Chef Tim Goodell of Public Kitchen & Bar will be competing against Octavio Becerra of Palate Food and Wine, Chad Colby of Mozza, Ben Ford of Ford’s Filling Station, and Joshua Whigham of The Bazaar. Chefs were selected based upon their love and talent for all things “pig”.
The Sunday event marks the eighth stop on the Cochon 555 Tour which celebrates heritage and heirloom breeds, chefs, and winemakers with events in ten US cities. Each competition features five chefs, five pigs from small local farms, and wine pairings from five family wineries. Each of the chefs prepares a 175 pound heritage breed hog for a tasting competition in which guests and local judges choose winning dishes based on presentation, utilization, and overall best flavor. The winner will go on to compete in the Prince or Princess of Porc nation Grand Cochon competition at the Food & Wine Classic in Aspen this June 19, 2011.
Guests attending Sunday will taste each of the pork dishes and have the opportunity to attend the after party hosted by Bacon Hall of Fame at Chef Goodell’s Public Kitchen & Bar at the historic Hollywood Roosevelt Hotel.
After party at Public Kitchen & Bar features signature cocktails, selection of hors d’oeuvres for $5.55 each including potato fritters, chicharrones, meatballs, oysters on the half shell, fish and chips, and chicken liver crostini.
