Balsamic Glazed Watermelon
A simple recipe, this Balsamic Glazed Watermelon includes fresh, diced watermelon, balsamic vinegar reduction, and add freshly chopped rosemary, if desired. Watermelon is low in calories and high in water content making it great for flushing out toxins, staving off food cravings. Eat up! It’s rich in cancer fighting lycopene, too! Making a classic balsamic glaze from inexpensive vinegar is a great way to add flavor and more metabolism friendly ingredients.
Remember, drizzle the glaze. The balsamic vinegar reduction is very powerful in flavor. A little goes a long way.
Recipe Options:
- Substitute fresh pears, peaches, or papaya for watermelon
- Or, enjoy all 4 together!
- Add fresh wild berries
- Add crumbled feta or goat cheese
- Serve atop fresh arugula greens
- Add fresh mint leaves and lemon zest
- Balsamic vinegar reduction can be made ahead of time. Also, make more of it! Use two cups of vinegar and simmer to desired thickness. Store in the refrigerator. Once refrigerated, the balsamic reduction will thicken a bit more so when making the vinegar reduction, try not to over reduce it. Test the thickness by using a spoon to lift some of the reduction and drizzling for the desired level of thickness.
