Herb Mini Frittata
Frittatas are such a delight to make. These Herb Mini Frittata are quick, easy and delicious. Sometimes, a bite is all you need! This recipe includes fresh herbs of basil, Italian flat-leaf parsley, and dill. But, feel free to other herbs such as mint or oregano, thyme or rosemary.
Herb Mini Frittata are the perfect brunch bite or make them one day and enjoy as a protein pick-me-up in the days ahead. Other delicious and nutritious “adds” could include:
- diced red, yellow, or orange bell peppers
- diced jalapeno peppers
- diced grape tomatoes (seeds removed)
- a bit of steamed or sauteed broccoli
- diced yellow squash or zucchini
- Not a fan of goat cheese? Use parmesan or parmigiano-reggiano
