Herb Mini Frittata

Frittatas are such a delight to make. These Herb Mini Frittata are quick, easy and delicious. Sometimes, a bite is all you need!  This recipe includes fresh herbs of basil, Italian flat-leaf parsley, and dill. But, feel free to other herbs such as mint or oregano, thyme or rosemary.

Herb Mini Frittata are the perfect brunch bite or make them one day and enjoy as a protein pick-me-up in the days ahead. Other delicious and nutritious “adds” could include:

  • diced red, yellow, or orange bell peppers
  • diced jalapeno peppers
  • diced grape tomatoes (seeds removed)
  • a bit of steamed or sauteed broccoli
  • diced yellow squash or zucchini
  • Not a fan of goat cheese? Use parmesan or parmigiano-reggiano

Herb Mini Frittata
Breakfast and Brunch
Herb Mini Frittata is made with fresh basil, parsley, dill and mixed with lemon zest, chives, and goat cheese and then baked in muffin tins

Ingredients

Grape seed oil, as needed
6 eggs
1/4 cup goat cheese
1/4 cup kefir milk or yogurt
pinch sea salt
pinch black pepper
fine zest of 1 lemon
1/2 cup chopped Italian flat-leaf parsley
1/2 cup chopped fresh basil
1/4 cup chopped fresh dill
1/4 cup chopped fresh chives

Instructions

Preheat oven to 350*F.
Prepare 12-muffin muffin tin by coating each lightly with grape seed oil.
In a large mixing bowl, combine the eggs, goat cheese, and kefir and whisk together.
Add the salt, pepper, and lemon zest, and whisk to combine.
Stir in the parsley, basil, dill, and chives.
Pour mixture evenly amongst the 12 muffin tins.
Bake about 12-15 minutes or until center is just cooked through.
Remove and let rest for about 5 minutes and serve.
