Zucchini Spaghetti with Chili Avocado “Pesto”
My mom commonly said that she felt zucchini was boring. I prefer to use the term versatile. Zucchini are delicious, high in vitamin A, vitamin C, have a high water content, and are a great source of fiber. Enjoy raw, steamed, baked or here, zucchini noodle ribbons are made using a zoodler. This handy gadget is affordable, easy to use, and makes perfect vegetarian zucchini noodles.
Zucchini “noodles” are tossed with fresh avocado and basil puree. Sauteed ground turkey gets spice from chili powder and flavor from onion.
Not a fan of turkey? Leave out the turkey and enjoy the zucchini noodles tossed with the avocado basil puree. For extra flavor, top with nutritional yeast which tastes a lot like parmesan cheese!
