My mom commonly said that she felt zucchini was boring. I prefer to use the term versatile. Zucchini are delicious, high in vitamin A, vitamin C, have a high water content, and are a great source of fiber. Enjoy raw, steamed, baked or here, zucchini noodle ribbons are made using a zoodler. This handy gadget is affordable, easy to use, and makes perfect vegetarian zucchini noodles.

Zucchini “noodles” are tossed with fresh avocado and basil puree. Sauteed ground turkey gets spice from chili powder and flavor from onion.

Not a fan of turkey? Leave out the turkey and enjoy the zucchini noodles tossed with the avocado basil puree. For extra flavor, top with nutritional yeast which tastes a lot like parmesan cheese!

Zucchini Spaghetti with Chili Avocado “Pesto”
Entree
Zucchini is made in to noodles, tossed with fresh avocado and basil puree and sauteed chili powder spiced ground turkey.

Ingredients

1 tablespoon grape seed oil
½ medium white onion, diced
¾ pound ground turkey
½ packet chili seasoning
4 ¾ cup avocado
1 cup fresh basil leaves
2 tablespoons fresh lemon juice
1 teaspoon sea salt
1 teaspoon white pepper
4 pinches chili powder
1 tablespoon olive oil
8 medium zucchini

Instructions

Heat grape seed oil in medium skillet over medium heat.
Add onion and saute about 1 minute, then add turkey and chili seasoning and cook until cooked through, about 5 minutes.
Remove from heat and set aside.
In a food processor, puree avocado, basil, lemon, sea salt, pepper, and chili powder until smooth.
Using a “zoodler” (spiral slicer), make zucchini spaghetti and place in a large mixing bowl.
Add cooked ground turkey, avocado mixture and olive oil and toss well to coat all evenly.
Serve.
NOTE: for a vegan option, skip the turkey!
