Boneless, skinless chicken breasts are basted with white wine, horseradish, spices and herbs and baked until tender. A simply delicious dish to be served with a variety of side dishes or sliced and put atop a mixed green salad.

Baked Chicken with Horseradish
Entree
Baked Chicken with Horseradish combines fresh or prepared horseradish, spices, and fresh herbs

Ingredients

1/2 cup white wine or apple juice
4 chicken boneless, skinless breasts; about 6 ounces each
1 tablespoon olive oil
2 tablespoons prepared horseradish
1 1/4 teaspoons mustard seed
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1/4 teaspoon dried thyme
Pinch sea salt
Pinch black pepper
2 tablespoons fresh Italian flat-leaf parsley, finely chopped

Instructions

Preheat oven to 350*F.
Pour white wine into a medium, square casserole dish.
Add chicken breasts.
Using a pastry brush or spoon, baste chicken breasts with olive oil.
Spread 1/2 tablespoon of horseradish on each chicken breast.
Cover dish with aluminum foil and bake for about 30 minutes.
While chicken is baking, using a mortar and pestle or grinder, grind the mustard seed and then combine with the remaining ingredients.
Baste the chicken with the wine in the casserole dish.
Spread mustard seed mixture over each chicken breast.
Bake, uncovered, an additional 20 to 30 minutes or until chicken is cooked through but still tender.
Serve with side dish such as quinoa, broccoli, or roasted peppers.
