Boneless, skinless chicken breasts are the star of this recipe. The delicious flavor comes from spicy chili powder, hot sauce, and red pepper flakes. Want more heat? Add more spice!

A meal the entire family will enjoy. And, it is healthy, too. Spices increase metabolism. Fiber from bell peppers and tomatoes aid in digestion. Plus, antioxidants and immune boosting properties from garlic, lemon, and onion.

Baked Chicken in Tomato Chili Pepper Sauce
Entree
Baked Chicken in Tomato Chili Pepper Sauce made with chili powder, peppers, tomatoes and chili pepper flakes. Perfect family meal.

Ingredients

2 teaspoons grapeseed oil
1 small white onion, diced
1 cup chopped celery
1 yellow or orange bell pepper, seeded and chopped
1/4 cup white wine such as sauvignon blanc or unsweetened apple juice
2 cups grape tomatoes
2 teaspoons chili powder
2 tablespoons lemon juice, fresh squeezed, no seeds
2 garlic cloves, chopped
1/4 teaspoon red pepper flakes
1/4 cup tomato juice
Dash hot pepper sauce
2 tablespoons capers, optional
4 boneless, skinless chicken breast halves

Instructions

Preheat oven to 375*F.
Heat grape seed oil in a saucepan over medium heat.
Add onion, celery, and bell pepper and saute for about 2 minutes.
Add the wine and continue to saute for another minute.
Add remaining ingredients EXCEPT chicken, cover and simmer about 15 minutes.
Cool and then puree in a blender or food processor.
Place chicken in a baking dish, cover with about 2 cups of sauce.
Bake about 40-50 minutes or until cooked through.
Serve with additional sauce or freeze remaining sauce.
