Slow Cooker Jalapeno Chicken
Soups and Salads
Coconut, chicken, jalapeno, wild rice, garlic, and lime are slow cooked in a crockpot for the easiest, tastiest family meal ever.

Ingredients

2 tablespoons coconut oil
3 pounds boneless skinless chicken breasts
2 cloves garlic, roughly chopped
2 medium jalapeno peppers, seeded and diced
1 ½ cups wild rice
2 ¾ cups low sodium chicken broth
1 ¾ quarts water
2 tablespoons dried oregano
2 bay leaves
¼ cup lime juice
2 teaspoons black pepper
1 teaspoon sea salt
6 tablespoons chopped fresh cilantro leaves
8 ounces goat cheese, crumbled
1 avocado, halved and sliced

Instructions

Preheat slow cooker and add coconut butter. Layer in chicken, garlic, jalapeno, wild rice, chicken broth, water, oregano, bay leaves, lime juice, pepper and salt. Cover with lid and slow cook for 4 hours over high setting.

Shred chicken using two forks, spoon into a bowl and top with cilantro, goat cheese and avocado.
