Turkey Meatloaf

I rarely recommend using non-stick cooking spray. For this recipe, spraying the baking dish will certainly help alleviate a super messy dish.

Turkey is leaner than beef. That is no secret. Because of this, a meatloaf or even Turkey Burgers can sometimes be a bit dry. What is the key? Adding a hint of moisture to the meat and not over-cooking it.

Key ingredients in this recipe include: cremini mushrooms, garlic, basil, parsley, an egg, a little milk, and a few breadcrumbs. For fun, how about adding 1/4 cup diced fresh red bell pepper? Maybe some yellow bell pepper. Want that cheesy flavor? Nutritional yeast is a delicious option to sprinkle on top just before serving!

MEATLOAF RECIPE TIPS AND SUBSTITUTIONS:

  • Add that moisture with the egg and milk
  • Not a fan of milk? Use unsweetened, plain almond milk or kefir
  • If eggs are a problem, substitute unsweetened applesauce or chia seeds soaked in water
  • “Knead” the mixture to combine but try not to overdo it
  • Press the mixture into the baking dish somewhat firmly without “mashing” it
  • Cremini mushrooms are used here. Feel free to replace with oyster, finely chopped portobello, or even porcini mushrooms YUM!

Turkey Meatloaf
Entree
Turkey Meatloaf - key ingredients include: cremini mushrooms, garlic, basil, parsley, an egg, a little milk, and a few breadcrumbs

Ingredients

Nonstick cooking spray
1 tablespoon grape seed oil
1/3 cup chopped cremini mushrooms
1/4 cup chopped white onion
1 clove garlic, minced
1 egg
1 tablespoon nonfat milk
1/2 teaspoon sea salt
1/2 teaspoon black pepper
1/2 tablespoon chopped fresh basil leaves
1/2 tablespoon chopped fresh Italian flat-leaf parsley
1/4 cup dry bread crumbs, plain or seasoned
1/2 pound ground turkey
1/4 cup organic ketchup (optional)

Instructions

Preheat oven to 350*F.
Prepare a small to medium loaf pan by spraying with nonstick cooking spray, sides and bottom.
In a heavy skillet, heat the oil over medium heat.
Add mushrooms, onion, garlic (and red or yellow bell peppers, if using. See notes above)
Saute until garlic is fragrant and the onion is just tender, about 4 minutes.
Remove from heat and set aside.
In a medium to large bowl, whisk together the egg and milk,
Add the salt, pepper, basil, and parsley and whisk to combine.
Add the bread crumbs and stir to combine.
Add the turkey and the mushroom mixture and mix well.
Gently, yet firmly, press the mixture into the prepared loaf pan.
Cover with aluminum foil and bake for approximately 35 minutes.
Uncover and cook an additional 5 to 10 minutes or until a meat thermometer reads 165*F.
Optional, just before baking the additional 5 to 10 minutes, spread the loaf top with ketchup and finish baking.
