Easy Posole with Chicken

In honor of Women’s History Month, I am celebrating one of my favorite chefs, Sara Moulton. Sara was a guest on The Bikini Lifestyles® Show on 790 KABC radio Los Angeles. She was such a delight to interview and even sent me one of her favorite saute pans.

Sara’s recipes are clean, fresh, and delicious. Here, hominy is used to make a hearty soup with pre-roasted rotisserie chicken, tomatillo salsa, and a little onion. A delightful meal that is made in minutes. Comfort food carbs, lean protein, and amazing flavors.

Serving Suggestions:

  • Chopped or thinly sliced radishes
  • Chopped scallions, green onions
  • Sliced jalapeno peppers
  • Grated Monterey Jack or cheddar cheese
  • Chopped fresh cilantro
  • Fresh avocado slices
  • Crushed tortilla chips
  • For extra spice, add a few chili pepper flakes to the recipe while cooking
  • Fresh squeezed lime or lemon juice, optional

Easy Posole with Chicken
Entree
Easy Posole with Chicken made with rotisserie chicken, hominy, and tomatillo salsa. Garnish with jalapeno, cheese, avocado, or scallions

Ingredients

1 rotisserie chicken
1 medium white or yellow onion
2 tablespoons grape seed oil
1 cup bottled or fresh green tomatillo salsa
4 cups chicken broth
Two 15-ounce cans white hominy
Optional garnishes:
Chopped radishes
Chopped scallions
Sliced jalapeno peppers
Grated Monterey Jack or cheddar cheese
Chopped fresh cilantro
Fresh avocado slices
Crushed tortilla chips

Instructions

Debone the chicken and discard the skin.
Roughly chop the chicken, about 4-5 cups.
Finely chop the onion, about 1 cup.
Heat the oil in a large saucepan over medium heat, until hot.
Reduce the heat to medium low.
Add the onion and cook, stirring occasionally, for about 5 minutes or until it has softened.
Add the salsa and cook about 5 minutes, stirring occasionally.
Add the chicken broth to the saucepan and simmer, partially covered, for about 10 minutes.
Drain and rinse the hominy.
Add the chicken and hominy and simmer until heated through.
Add a pinch of sea salt and black pepper to taste.
Ladle into bowls and serve with garnish of choice.
