Simple Shrimp Scampi
Simple Shrimp Scampi is a wonderful dish made with extra large shrimp, linguine pasta, fresh basil, a hint of red pepper flakes, and lemon. Top with parmigiano-reggiano cheese just before serving. A classic recipe to be served year round, serve with an equally simple side salad such as Mixed Greens with Toasted Almonds, Tomato, and a sprinkle of feta cheese. Or, skip the feta cheese and enjoy the light and tangy flavors of white wine vinegar and lemon.
Recipe Suggestions:
- Substitute nutritional yeast for the cheese and still enjoy the parmesan flavor
- Add in blanched, chopped asparagus tips
- Add in freshly diced red bell pepper, about 1/3 cup
- Consider using quinoa pasta or zucchini noodles
- Other terrific pasta options: angel hair, penne, or skip the pasta and use wild rice!
- Try eating the salad AFTER the pasta; this Arugula Salad with Pear is super yummy.
- Protein alternatives to shrimp: diced chicken breasts, ground turkey, pork tenderloin medallions
