Simple Shrimp Scampi

Simple Shrimp Scampi is a wonderful dish made with extra large shrimp, linguine pasta, fresh basil, a hint of red pepper flakes, and lemon. Top with parmigiano-reggiano cheese just before serving. A classic recipe to be served year round, serve with an equally simple side salad such as Mixed Greens with Toasted Almonds, Tomato, and a sprinkle of feta cheese. Or, skip the feta cheese and enjoy the light and tangy flavors of white wine vinegar and lemon.

Recipe Suggestions:

  • Substitute nutritional yeast for the cheese and still enjoy the parmesan flavor
  • Add in blanched, chopped asparagus tips
  • Add in freshly diced red bell pepper, about 1/3 cup
  • Consider using quinoa pasta or zucchini noodles
  • Other terrific pasta options: angel hair, penne, or skip the pasta and use wild rice!
  • Try eating the salad AFTER the pasta; this Arugula Salad with Pear is super yummy.
  • Protein alternatives to shrimp: diced chicken breasts, ground turkey, pork tenderloin medallions

Simple Shrimp Scampi
Entree
Simple Shrimp Scampi is made with extra large shrimp, linguine pasta, fresh basil, a hint of red pepper flakes, and lemon

Ingredients

12 ounces linguine pasta (or your favorite)
1/2 cup reserved pasta water
1/2 tablespoon plus 1 teaspoon grape seed oil
1 1/2 pounds extra large shrimp, peeled and deveined
2 tablespoons unsalted butter
4 cloves garlic, minced
1/2 teaspoon red pepper flakes
1/2 cup white wine such as pinot grigio
1/2 cup reserved pasta cooking water
1/2 teaspoon sea salt
Cracked black pepper to taste
4 tablespoons fresh lemon juice
1/3 cup grated parmigiano reggiano cheese
1/4 cup chopped basil leaves

Instructions

Fill a large stockpot 3/4 with water and add 1 teaspoon of salt.
Bring to a boil and add pasta.
Cook pasta until al dente, about 8 minutes.
Reserve 1/2 cup of pasta water before draining.
Drain pasta and set aside.
Heat 1/2 tablespoon of grape seed oil in a large skillet over medium-high heat.
Add shrimp and saute until just cooked through, about 3 minutes.
Remove shrimp and set aside.
Add butter to the skillet and remaining grape seed oil.
Add garlic and red pepper flakes; saute about 30 seconds.
Add the white wine and pasta water
Reduce heat to low and cook until liquid has been reduced by half, about 8 minutes.
Add 1/2 teaspoon sea salt, cracked black pepper as desired.
Add the cooked shrimp and cooked pasta.
Toss all to coat for about 3 minutes.
Remove from heat and add lemon juice, parmigiano reggiano cheese, and basil.
Toss together and serve.
