Banana Leaf Pork Tenderloin with Fig Sauce

Banana leaves are such a fun way to bake or grill proteins! Here, I did two versions. The first is an Herb Marinated Pork Tenderloin which marinated overnight in the refrigerator with dried herbs or oregano, thyme, basil, and some added ingredients such as fresh garlic.

The second version was chicken drumsticks and two chicken breasts. I did not even add salt and pepper because the flavor is in the waterloupe, red bell pepper, and jalapeno. Warpped in banana leaves, of course.

Banana Leaf Wrapped Pork and Chicken
Entree
Banana Leaf Wrapped Pork and Chicken with Fig Sauce, Waterloupe, Red Bell Pepper, Jalapeno with carmelized onion and yellow squash

Ingredients

1 1/2 waterloupe (see notes above)
1 red bell pepper, seeded and roughly chopped
1 large jalapeno pepper, seeded and diced
1 pork tenderloin, pre-marinated (see notes above)
2 chicken breasts
4 chicken drumsticks
Banana leaves - about 12 to 15 whole banana leaves
Water
Fig Sauce - see separate recipe

Instructions

Preheat oven to 380*F.
Pour about 1/2 cup water into a baking safe 9x13 glass or pyrex casserole dish.
Line baking dish with banana leaves.
Place chicken and / or pork tenderloin into baking dish.
Top with sliced waterloupe.
Top with red bell pepper and jalapeno.
Wrap with banana leaves fully.
Bake in oven for about 1 hour.
Serve with yellow saffron rice, quinoa, roasted potatoes, or cauliflower mash (recipe link above).
