When I lived in Athens, Georgia quite some time ago, I was introduced to my first serving of authentic Black Bean Soup. The restaurant was Harry Bissett’s New Orleans Cafe and it was located right on Broad Street in downtown Athens. Athens, Georgia… what a city! I had the blessing of attending college at the University of Georgia and while our Georgia Bulldogs are a fun team to watch, being a fan, in general, is even more exciting! From the “Go Dawgs sic ’em” to the Red and Black, walking the university campus any day of the week, any time of year is beyond inspiring… I would venture to say even to Auburn Tiger fans. Okay, that may be a stretch, HA!

One of my dearest friends introduced me to not only the restaurant but to the dish… Black Bean Soup. He told me that this soup was best served with a dollop of sour cream, creme fraiche, and a splash of sherry. And, he was right!

Before I share the recipe, here are a few health benefits that come from eating black beans.

Recipe

Easiest Black Bean Soup

Canned black beans are simmered with garlic, onion, bacon, and buttermilk and served with goat cheese and sherry

Ingredients

2 tablespoons grapeseed oil
3 cloves garlic, diced
1/2 white onion, diced
3 strips bacon, diced
13 15 ounce cans black beans
1/4 cup reduced fat buttermilk
1 1/2 tablespoons black pepper
goat cheese
sherry

Instructions

In a large stockpot, heat grapeseed oil over medium high heat and add in garlic, onion, and stir together using a wooden spoon.
Let the garlic and onion cook for about 2 to 3 minutes, stirring as needed.
Add bacon and stir, as needed, to brown and cook.
Add all of the black beans and stir.
Bring to a boil, stirring as needed.
Add buttermilk, black pepper, and reduce heat to simmer.
Simmer about an hour.
Serve hot with a dollop (about 1 tablespoon) of goat cheese and a splash of sherry.
