Gourmet Charcuterie Cups

Gourmet Charcuterie Cups are filled with savory meat, cheese, and olive skewers, sweet fresh fruit skewers, manchego, nuts and rosemary.
Our family made these stylish, flavorful, “filling” snacks for my niece’s recent wedding in Dallas, Texas. This recipe makes 24 charcuterie cups. We made 187 of them, LOL.

Recipe Prep Tips & Tricks:

For the fruit skewer, blackberries are a “firmer” fruit versus raspberries. Blueberries, if you can find larger-sized blueberries, are also a great option for skewers

When making the savory skewer, select a slightly longer skewer and stack in this order… pitted green or kalamata olives, bocconcini cheese, quarter-folded salami slice, cherry tomato (use the whole tomato because if you slice them in half, the water and seeds from the tomato half will make the cups soggy), cube cheese, and cornichon.

Tips… cornichons are an English-style pickle that are perfect in size for a savory skewer. Sliced pickles are too wet and flimsy. Small dill pickles are still a bit large and usually need to be sliced in half. Cornichons are a bit tangier than traditional dill pickles and are available at most grocery stores on the aisle with the pickles and olives.

Prior to filling the cups, line them with parchment paper. Don’t overthink it. Cut 24 rectangular pieces of parchment paper about 5×8 inches. Tuck the paper in the “cup” being sure to cover the bottom of the cup to prevent the natural water and wetness from the fruits, olives, pickles from saturating the bottom of the cup.

Grissini is the Italian name for breadstick. I made them from scratch when I worked as a stage in Florence, Italy. Most grocery stores sell grissini. They can be tricky to find as they are found in the bakery section, commonly. Sold in boxes, ask the baker where they are located.
Assembling the Cups:

Charcuterie cups can be assembled the day before EXCEPT for the grissini (breadsticks) as they will get soggy.

Line the paper cups with parchment paper – see note above

Add 2-3 cubes cheese in the bottom with 2-3 red grapes (purchase pre-cubed cheese at your local grocer. Options usually include cheddar, white cheddar, pepper jack, and colby jack)

Add Savory skewer to the cup after placing the cube cheese and red grapes in the bottom of the cup first. The cube cheese and grapes add a sturdy base to the cup and can be used to secure the skewers. An added bonus, they are delicious bites for your guests.

Add the fruit skewer

Add the nut cups

Add the sliced manchego cheese wedge

JUST BEFORE SERVING, add 2 to 3 grissini (breadsticks) and a sprig of fresh rosemary. Don’t be shy on the height of the grissini. Multi-level heights are playful looking. Have fun with it and don’t overthink it.

This recipe is for 24 charcuterie cups. I recommend making at least 5 extra to allow for any “hiccups”.
