For the pasta lovers, this simple recipe is for you! Large pasta shells are stuffed with a combination of ricotta and goat cheese, spinach, and Italian seasoning. This recipe was created as an appetizer to be served at parties or for easy at-home snacks. Double the recipe and serve as an entree. Serve with a side salad such as this Arugula, Pear and Pomegranate Salad.

Stuffed Pasta Shells with Italian Seasoning
Appetizer
Stuffed Pasta Shells with Italian Seasoning are ideal for family snacks, as an entree, or party dish. Ground turkey, spinach and goat cheese!

Ingredients

12 large shell pasta, boiled and drained
1 cup cooked ground turkey
2 handfuls spinach leaves, chopped
1/2 cup ricotta cheese
1/2 cup goat cheese
2 teaspoons Italian seasoning
1 teaspoon minced fresh garlic
1 small zucchini, sliced into 12 rounds
1 cup all natural marinara sauce
Parmesan cheese or nutritional yeast for garnish

Instructions

Preheat oven or toaster oven to 375*F.
In a medium mixing bowl, mix together turkey, spinach, ricotta, goat cheese, Italian seasoning, and garlic.
Fill the shells with equal amounts of the turkey mixture.
Line a baking sheet with parchment paper.
Place zucchini rounds on baking sheet.
Place one stuffed shell on top of each zucchini round.
Cook about 10 minutes.
Top with marinara sauce and cook an additional 3 minutes.
Serve with a sprinkle of parmesan cheese or nutritional yeast.
