Tropical Fruit Salad with Melissa's Produce

I recently visited my friends at Melissa’s Produce for the summer “glow-down” on fruits of the season. Wow, talk about delicious and informative. Did you know that unseasonably warm winters make for larger, juicier, sweeter fruits? Yup, heat plus fruit equals sweetness. And juice! Thanks, Melissa’s Produce!

Tropical Fruit Salad is a beautifully delicious combo of dragon fruit, pink pineapple, moscato grapes, coconut, and white wine vinaigrette with fresh fruits from Melissa’s Produce

Super Fun Ingredient Options:

  • Diced fresh jalapeno peppers

  • Fresh mint leaves – always a Bikini Chef® favorite

  • Toss in a few tangerine slices!

  • KIWI!!! Kiwi is always a great idea

To say that this recipe is packed with nutrients is an understatement. Vitamin C, lycopene, Vitamin K, tons of dietary fiber – the tasty kind, beta-carotene, healthy fats, and guess what else??? Tons of natural water content! Eat your water this summer.

Pink Lemonade Bikini Cocktails

Summer Cocktail Idea:

  • Use some of the juices from the tropical fruit and swirl it into a refreshing cocktail!

  • Libation options:

    • Gin

    • Vodka

    • Rum

    • Or, even add some bubbles… Champagne, of course!

  • Take a cucumber slice, a slice of pineapple, and a strawberry or other fruit in the salad recipe; throw it on a toothpick

  • It’s a two-martini glass day! One for the Fruit Salad and one for the Bikini Cocktail

Tropical Fruit Salad
Side Dish or Salad
Tropical Fruit Salad is a beautifully delicious combo of dragon fruit, pink pineapple, moscato grapes, coconut, and white wine vinaigrette with fresh fruits from Melissa's Produce

Ingredients

1 8-ounce container organic fresh strawberries, stems removed, sliced in half
1 pink pineapple (visit local store for Melissa's Produce)
1 Dragon Fruit, "peeled" with some outer layer retained for color and nutrients
1 mango
About 15 moscato grapes, sliced in half
2 mini cucumbers, randomly peeled (see video) and sliced
1/4 cup plus 1 tablespoon coconut shavings or flakes
Make vinaigrette:
1/4 cup white wine vinegar
1/2 teaspoon paprika
1 tablespoon fresh lemon juice

Instructions

Prepare all fruits as described above and place in a large mixing bowl.
In a small bowl, whisk together white wine vinegar, paprika, and lemon juice.
Pour vinegar mixture over fruit and toss to coat.
Serve in a fun, decorative dish.
Optional ingredients: diced jalapeno peppers and fresh mint leaves.
