Roasting and Peeling Peppers

Roasting peppers is really pretty cool. The purpose of roasting them is to soften the peppers and create a rich depth of flavor. Char (or roast) peppers in bulk to use later or prepare as many as is needed for a recipe.
Prepare roasted peppers, place in a resealable plastic bag, and store in the freezer for up to 2 years. Remember to write the date on the plastic baggie to keep track of the time.

A Quick “How To”:
- The goal is to char the outer skin of the pepper
- The roasting process takes about 8 minutes though smaller peppers may take less time and larger peppers may take more time
- Roast over an open flame on stove top using long-handled tongs to hold the pepper
- Turn occasionally until charred evenly
- Roast over open flame on outdoor grill
- Heat grill until hot
- Using long-handled tongs, turn the chiles over direct heat until blackened all over
- Place on a sheet pan and roast under the broiler in the oven
- Tip: set a timer for about 5 minutes so you don’t forget them!
- Check peppers and turn as needed for even charring

- Place chiles in a paper bag and roll the top down to close the bag
- Allow peppers to sweat and cool prior to peeling, about 10-15 minutes
- Or, place chile peppers in a pan and cover with a lid allowing to rest about 10-15 minutes
- Place peppers in a bowl and cover with a damp towel or plastic wrap
- Let peppers rest about 15 minutes
- Once peppers have cooled, wear plastic gloves to remove the outer skin easily
- If stuffing the peppers with your favorite filling, leave the stem intact, slice lengthwise up one side of the pepper then wearing gloves, gently remove the seeds
- If storing them for later or chopping, wear plastic gloves to remove the stem and the seeds

Storing Roasted Peppers:
- Roasted peppers can be frozen for up to 2 years.
- Place in a plastic bag, label the bag and the date
- Place in the freezer
- Freeze in individual servings, if desired
